I would say Enrico Bartolini is a better chef than Bottura. I worked with Massimo he and his team were guests in my hotel for some food festival. Gala dinner for 100 people. They did a terrible job. I didn’t see so many uninterested people in my life in the kitchen. The only one person from their team that really worked was Jessica Rosval. I was killing myself to fix all the plates that they missed something on for his woops I dropped a tart dessert. Massimo was the whole time on the phone watching clips of sport cars and football on YouTube. He was just there for plating hot food. They fucked up parmesan emulsion for his tortellini, oil was swimming on the top and he just ignored it and sent it out like that. I wanted to die from embarrassment since the price was 600 euros with wine pairing. It was an obvious money grab for him so I really can’t respect such a chef. He was cool after the service thankful and everything but man he really broke my heart because I had such high expectations from him.

For me is Nuno Diniz, Portugal, I had the pleasure of working with him, only works with fresh, organic, and high quality local products from small producers. Simple food made excellent by his execution. I worked with a lot of high end portuguese chefs, but his passion for flavor and the respect of the ingredients is uncanny. Absolutely in love with his food, even tho I work in France now, I still use a lot of things I learned with him, and from his books
